  1. Use the remaining cold rice. Left in the fridge overnight, the rice grains will harden, making them easier to separate and reducing the chances of your fried rice becoming mushy. If you can't wait, air freshly cooked rice to remove moisture and refrigerate the rice for a few hours before cooking.
  2. Use medium to long grained rice instead of sweet rice/short-grained sushi or glutinous rice. Medium-grained jasmine rice is my choice for smooth, sturdy granules that don't clump or crumble when fried. Short-grained rice tends to be softer and stick together.
  3. A blazing hot pan (the pan is ideal but a large frying pan, skillet, or Dutch oven can be used) and a sufficient amount of oil will ensure your ingredients don't stick to the surface.
  4. Sauté the seasoning to make it more durable. For the efficiency of the time to make fried rice in restaurants, you can mix the seasoning first and store it.
  5. Don't overdo it with spicy seasonings like salted soy sauce or oyster sauce. I add just a few tablespoons of the sauce of my choice to taste and then add salt to its salty and savory flavour. Too much sauce will make your rice mushy.

Seasoning Fried Rice With Egg

  • Cooking oil
  • Egg
  • Cold rice
  • Salt or/and soy sauce
  • Green onion, optional

Easy Egg Fried Rice

  1. Beat eggs well with pinch of salt and slice green onions. Set aside.
  2. Heat a wok or a skillet over high heat; add 1 tbsp cooking oil and swirl to coat. Pour beaten eggs into the wok and scramble. 
  3. When the eggs are cooked 3/4 way, add remaining 2 tbsp cooking oil and cold rice.
  4. Breakdown rice and mix it with the eggs. 
  5. Add soy sauce around the edge of the wok, so it will burn slightly for the smoky umami flavour. Add salt to your taste and mix everything well. Reduce heat to low if you need to.
  6. Turn off the heat, stir in green onions.
  7. Garnish with sesame seeds if you’d like to!
  8. Enjoy with any other dishes you decided to serve with!
